Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion, carrots, and celery. Cook for 5-6 minutes until softened. Add garlic and cook 30 seconds more until fragrant.
Add the chicken pieces to the pot along with chicken broth, bay leaves, and dried herbs. Bring to a boil, then reduce heat to a gentle simmer.
Cover and simmer for 25-35 minutes until the chicken is cooked through and tender. The slow simmering develops deep, comforting flavour throughout the broth.
Remove chicken from the pot and shred with two forks. Return shredded chicken to the pot. Add any additional ingredients like noodles, rice, or vegetables and cook until tender.
Remove bay leaves. Taste and adjust seasoning with salt, pepper, and a squeeze of lemon juice. Ladle into bowls and serve hot with crusty bread for dipping.
